  1. It's of chicken stock(used Costcos).
  2. Prepare of pork shoulder julienned.
  3. Prepare of shitake mushrooms sliced.
  4. It's of black fungus chopped.
  5. You need of slice ginger minced.
  6. It's of extra firm tofu 1×1/2×1/4".
  7. It's of Handful julienned carrots.
  8. You need of bamboo shoots julienned.
  9. Prepare of &1/2 tsp chili paste (Sambal).
  10. It's of white pepper.
  11. Prepare of soy sauce.
  12. It's of aged vinegar.
  13. Prepare of dark soy sauce.
  14. It's of egg beaten.
  15. It's of scallions chopped.
  16. Prepare of sesame oil.
  17. Prepare of corn starch plus water to make slurry.

Hot and sour soup instructions

  1. Heat stock to boiling in wok.
  2. Add mushrooms, carrots, bamboo shoots, ginger, Sambal to pot. Reduce to low and cook 6 to 8 minutes.
  3. Add pork that an hour prior was marinated in 1 Tbs soy, 1 Tbs water, tsp corn starch, 2 Tbs cooking oil, 1/8 tsp white pepper and sprinkle of salt. Stir soup to separate pork. Cook 2 minutes.
  4. Add all soy sauce, vinegar, 3/8 tsp white pepper and cook 4 to 6 minutes.
  5. Slowly add slurry and return to low boil to thicken.
  6. When thickened, add beaten egg in spiral pattern. Wait 5-10 seconds, slowly stir to form egg ribbons.
  7. Add tofu and sesame oil and cook 2 minutes.
  8. Serve with chopped scallions and fried wontons if you like.
