Ingredients of Cauliflower Parsnip & Bacon Soup

  1. It's of Bacon rashes (diced) + 2 more slices for the garnish.
  2. It's of brown Onion (diced).
  3. Prepare of garlic (minced).
  4. It's of fresh Thyme.
  5. You need of Vegetable stock.
  6. Prepare of Water.
  7. It's of Parsnips (diced).
  8. Prepare of lactose free plain yoghurt.

Cauliflower Parsnip & Bacon Soup instructions

  1. Heat a saucepan over medium heat. Add bacon, onion & garlic, thyme & cook, stirring for 5 minutes..
  2. Add the stock & water to the pan. Increase heat to high, bring to the boil, reduce heat & simmer on medium heat until parsnip is cooked & tender. Set aside for 10 minutes to cool slightly..
  3. With a handheld blender blitz until smooth. Add to bacon and onion mix, cook through for a further 2 minutes..
  4. Garnish with yoghurt & extra bacon..
  5. Note: for a variation I often blitz it all together, and garnish with a tablespoon of crispy bacon..
